Extreme Greens: Understanding Seaweeds, is the new book by Sally McKenna of Bridgestone Guide / McKenna’s Guides. It offers readers the experience of exploring the underestimated wonders of Irish seaweed. In conjunction with the release of her new book, Sally recently ran a workshop with Aniar Boutique Cookery School at Aniar restaurant which we luckily had the privilege of attending.
Not only did we learn loads of interesting facts about seaweed at the workshop, we also learned a range of techniques for cooking the seaweed and preparing various dishes, with things such as breads and salads being incorporated into the menu. It was yet another successful workshop hosted by Aniar’s owner and chef JP McMahon of Eat Galway.
