I also feel honoured to be part of this edition of Food on the Edge”. Albert Adria’s talk is entitled ‘Sea as a Source’. When traveling, and specially when one cooks abroad, a chef realizes his frequent sources that end up characterizing its own cuisine. In Albert’s case, having grown up (personally and professionally) in Cala Montjoi first and in Barcelona afterwards, seafood has always been a constant within his cuisine and with his restaurants.
