Each dish on an exquisite 6-course menu has been carefully chosen to enhance the flavour notes of featured beers by Urban Brewing, O’Hara’s Brewery and Estrella Galicia.
Guest chef Xosé Torres Cannas of Michelin star Pepe Vieira restaurant in Galicia, Spain joins Stack A Restaurant and Urban Brewing brewmasters for a unique event.
A very special ‘#DiscoverTheUnexpected — Top Chefs Meet International Master Brewers’ event which, in a unique twist, pairs elegant food with delicate and complex beers, is happening on the 28th of November at Stack A Restaurant at Urban Brewing to celebrate Ireland and Galicia’s shared excellence in brewing, and will feature a unique kitchen collaboration between Michelin star guest chef Xosé Torres Cannas of Pepe Vieira restaurant, Galicia, Spain and Urban Brewing’s head chef Dan Keane.
Expect an evening of brilliancy in brews and culinary creativity, when each dish off the six-course tasting menu, influenced by Galician and Irish cuisine, will be accompanied by a different beer from each region — two from Urban Brewing, brewed on-site in its microbrewery, one from O’Hara’s Brewery and three from Estrella Galicia — with the dishes specially created to bring out the beers’ kaleidoscope of flavours, aromas and textures.

A lot of thought has gone into the beer choices and the food pairings, which will add an exciting twist as well as a fun and relaxed opportunity for people to learn more about the complex flavours of Urban Brewing’s beers. We feel privileged that we will be welcoming a chef of the calibre of Xosé Torres Cannas to Stack A Restaurant at Urban Brewing with whom our head chef Dan Keane shares a love for local, seasonal ingredients.”
Urban Brewing’s head chef Dan Keane and guest chef Xosé Torres Cannas will each create three courses — with Xosé cooking with ingredients he is bringing specially over from Galicia — carefully designed to complement and highlight the special characteristics of the six beers being featured.
The menu will open with alcohol-free Estrella Galicia 0.0, and to accompany it, Xosé will create a shellfish dish of Scallop Cured in Salt with Aerated Fennel Soup featuring citrus and sour flavours that will bring out the lightness and very refreshing character of the beer. The second beer will be Urban Wit, a Belgian-style wit beer by Urban Brewing, served with a Salt Baked Celeriac dish by Dan to bring out the flavours of coriander and orange peel of the beer.
The third beer of Estrella Galicia World Lager will be served with a Robaliza Casserole Stew dish by Xosé, which features the classic Spanish ingredient of cod tripe cooked in a cod broth. This stronger seafood dish will enhance the light-bodied, balanced and round character of the lager, and bring out its fresh and floral tones with herbal notes. Estrella Galicia’s 1906 Reserva Especial will be the fourth featured beer accompanied by a rich La Patata Del Cocido pork dish by Xosé. Featuring potato stuffed with a stew of pork, ribs and skirt steak on a broth of sausages, ham, veal, white beans and cabbage, these ingredients will bring out this lager’s pleasant caramel and coffee notes as well as its roasted flavours.
The fifth beer of Urban Bock will be accompanied by a dish by Dan of Haunch of Glenmalure Venison with red cabbage pureé, spiced wine, bitter chocolate and blackberries that will enhance this beer’s rich, sweet and malty flavour notes. For the final course, O’Hara’s Leann Folláin, which is aged in first fill American bourbon oak barrels, will be complemented by a dessert dish by Dan of Spiced Pumpkin to highlight the light bourbon notes and flavours of vanilla, dark fruits and oak of this smooth, rich and luxurious stout.

The idea of having chefs Dan Keane and Pepe Vieira working side by side was irresistible for us as we see this approach as the perfect formula for uniting the quality beers that are going to be served.”
Each of the six beers will be introduced in turn by Urban Brewing’s master brewer Mickey Lynch and Abel Blanco Sampedro from Estrella Galicia, while each chef will introduce their respective dishes.
This very special ‘#DiscoverTheUnexpected – Top Chefs Meet International Master Brewers’ event is taking place on Wednesday the 28th of November at 6.30pm at Stack A Restaurant at Urban Brewing in association with Urban Brewing, O’Hara’s Brewery and Estrella Galicia.
