Pork Three Ways Makes RAI ‘Mine Fine Dine’ Competition Final

Student Ryan Kerry (18)  came up with this beauty which won him a place in the final for RAI ‘Mine Fine Dine’ competition.

Pressed pork belly, homemade pork sausage, pork fillet stuffed with pork loin, purple sprouting broccoli, potato fondant & red wine & thyme reduction

Ryan’s favourite restaurant, The Pigs Tale Restaurant in Gorey and owner Garrett Bradshaw, worked with Ryan to produce this dish of   ‘Pork Three Ways’ . The dish consists of Pressed pork belly, homemade pork sausage, pork fillet stuffed with homemade black pudding wrapped in bacon, purple sprouting broccoli, potato fondant & red wine & thyme reduction.

The final of the Mine Fine Dine Schools Competition take place 7th May.  Best of luck Ryan!
