Run by husband and wife team, Carmel Corrigan and Nitin Gautam, Copper & Spices first opened its doors in April 2009. Priding themselves on authenticity, Nitin and his team in the kitchen, two Indian and two Nepalese chefs, grind their own spices and spice blends to make unique dishes from both India and South East Asia.
The couple have recently launched a new Summer Tasting Menu which features authentic Indian cuisine using local ingredients with Nitin’s blends of spices. The menu which features mouth watering dishes such as mint potatoes and sweet tamarind or tandoor baked monkfish to start; lamb shoulder samosa or rack of lamb and tea infused chick peas as a main, and a passion fruit sorbet or mishti doi ( a Bengali sweet yoghurt dish) to close.
Nitin who graduated in Pusa, India has experience of working with 5star Hotels such as The InterContinental, The Imperial and The Trident Group of Hotels.
“Food and cooking has always been a passion of mine an exciting adventure. For me, the last five years of Copper & Spices has been about staying connected to my culture, my religion and the rich history of India, while exhibiting the finest local artisan food here in Navan.
